I was excited when Pampered Chef contacted me to do a product review and giveaway* – they have some fantastic kitchen products! I knew you all would be excited too. Since my Thai Chicken Skewers with Peanut Sauce were such a big hit, I’ve been on a huge kebab kick. The marinade for this Hawaiian Chicken Skewers recipe is super flavorful and the chicken turns out moist and delicious. It’s a perfect complement for the grilled pineapple. If you’re excited to make this recipe but don’t have skewers, don’t fret! You could easily marinate the chicken breasts whole and grill them and the pineapple (as slices) and serve them together on a bun or as-is with a side of veggies and/or rice. Pampered Chef sent me some products to make this recipe and I was very impressed. When it comes to mincing garlic, I’m always torn. My normal garlic press seems to leave a lot of the garlic behind – what a waste! Alternatively, mincing it by hand is a pain. The Pampered Chef Garlic Smash & Paste is great because it’s fast and easy to use and I got to use the entire clove – problem solved! I also used the Pampered Chef Ginger Grater and to be honest, I was super skeptical at first. Usually I grate ginger using my box grater and I thought “why would I need an entirely separate grater just for ginger?” I am eating my words now though because this works about a zillion times better. Whereas the ginger always gets stringy and hard to grate on my box grater, this grater broke that chunk of ginger down with ease and no stringy parts getting in the way. I will definitely use this again!
The Pampered Chef product I was most excited to use was the Fruit and Cheese Cutter. As soon as I saw it I thought “I could make my own Edible Arrangements!!” How fun is that? The cutter comes with four shapes (flower, heart, triangle and square). I wasn’t sure if it would cut through pineapple because the cutters don’t seem sharp at all, but it actually worked great. It was fun to have pineapple flowers to go on the Hawaiian themed skewers!
Just a note about the nutrition information and Weight Watchers Points for this recipe: If you plug the full amounts of the marinade ingredients listed into a nutrition calculator you will get different nutrition info than I have listed. Since so much of the marinade gets thrown out, I decided to weigh the marinade before adding the chicken and then again after removing the chicken the next day. More than ¾ of the marinade was still in the bag so when I calculated the nutritional values I only plugged in ¼ of the amounts of each marinade ingredient. The totals below should be pretty accurate reflections of what actually makes it onto your plate!
