Guest Post: Slow Cooker Chicken Enchilada Soup

Slender Kitchen Chicken Enchilada Soup

Hello!  Kristen from Slender Kitchen here.  I’m thrilled to be sharing a recipe on Emily Bites today.

If there is one thing you need to know about me, it’s that I am obsessed with my slow cooker. I truly think it is one of the easiest ways to make delicious and healthy meals for family and friends without spending hours in the kitchen.  I use mine at least once a week, usually more and love coming home with dinner already done.

So when Emily reached out asking if I would share a recipe, I knew I wanted to pick a quick, easy, and delicious meal that you could make in your slow cooker.  This recipe for Slow Cooker Chicken Enchilada soup couldn’t be easier – dump everything in and walk away  – and the end result is packed with flavor.  Imagine a heartier version of chicken tortilla soup amped up with the wonderful, spicy flavors of enchiladas.  All that and it comes in at just 257 calories and 6 PointsPlus.  It’s great for an easy family dinner, football party, or to freeze in individual containers for quick lunches or dinners.

Slow Cooker Chicken Enchilada Soup

Yield: 8 (1.25 cup) servings

Ingredients:

  • 1 lb. chicken breast
  • 1/2 tsp. cumin
  • 1 tsp. chili powder
  • 1 tsp. garlic powder
  • 1/2 tsp. salt
  • 1 onion, diced
  • 1 green pepper, diced
  • 1 red pepper diced
  • 3 cloves garlic, minced
  • 10 oz. can tomatoes with green chiles (like Rotel)
  • 14 oz. canned red enchilada sauce
  • 6 cups chicken broth
  • 1 tbsp. tomato paste
  • 28 oz. canned black beans, rinsed and drained
  • 1/4 cup masa harina (or corn meal)
  • 1/2 cup shredded reduced fat cheddar cheese
  • Toppings: chopped tortilla strips, chips, cilantro, onions, avocado, chopped jalapenos, cheese, Greek yogurt, light sour cream, etc.

Directions:

  1. Add the chicken breast, cumin, chili powder, garlic powder, garlic cloves, salt, onion, peppers, tomatoes with green chiles, enchilada sauce, chicken broth, and tomato paste to the slow cooker.
  2. Cook on low for four hours. Remove the chicken and shred with 2 forks. Return to soup and add the beans.
  3. Mix the masa harina (corn meal) with 1/4-1/2 cup of water (more if needed) until smooth. Add to the soup and let cook for 30 more minutes. This will thicken the soup.  Top with 2 tbsp. cheese. You can also stir it in depending on your preference.

  8. Everyone in my family found this inedible. Big disappointment, as I have never been anything less that in love with all of EB’s recipes. Guess we learned not to trust guest bloggers. Sad that this huge pot will go down the drain 🙁

    • So sad to hear that, Sarah. I do think Kristen is a great blogger, so I wouldn’t rule her out completely! I haven’t made this particular recipe of hers myself, so I can’t say what might have gone wrong, but I’m sorry you weren’t happy with the results! :/

  9. Bummed… have this in the crock pot right now but it looks really brothy and nothing like the thick creamy chili in the picture.

  10. Final consensus…. it’s nothing like the pic and is rather blah. Definitely will not make again and will be lucky if we don’t waste the whole pot. 🙁 Really disappointing after following the recipe to a T. I will stick to EB’s recipes which have been amazing and skip the guest posts.
