This Thai Chopped Chicken Salad with Peanut Dressing is bright, fresh and filling with a savory peanut dressing that will have you swooning! Chock full of ingredients, this is no boring, wimpy salad. Fresh lettuce, crunchy cabbage, chicken, carrots, cucumber, edamame, peanuts, this salad makes an amazing lunch or unique dish for a brunch or potluck. You could also pair this with a cup of soup for a satisfying dinner! Plus, the peanut dressing tastes positively sinful, but uses PB2 (powdered peanut butter) which lightens it up dramatically! I find most stores by me carry PB2 (or similar brands) now, but if you have trouble finding it you can always order it on Amazon. 1tablespoonrice wine vinegar, or white wine vinegar or apple cider vinegar
1tablespoonfresh lime juice
1teaspoonsesame oil
6tablespoonsPB2 powdered peanut butter
1tablespoonpacked brown sugar
¾teaspoonblack pepper
½teaspoongarlic powder
½teaspoonSriracha
Instructions
Toss the salad ingredients together in a large mixing bowl. In a smaller mixing bowl, whisk together the dressing ingredients until smooth. Keep separate until ready to serve. Each serving is about 2 & 1/3 cups of salad and 1 ½ tablespoons of dressing.
