Creamy Corn with Bacon and Jalapenos

Creamy Corn with Bacon and Jalapenos being scooped

This Creamy Corn with Bacon and Jalapenos makes a great side dish for meat on the grill, perfect for dinner or a cookout! I love how easy this is to make and the flavor is addicting. All you’ll need to do is crisp up the bacon, stir everything together, and bake! I think you could also easily heat this in a slow cooker or otherwise if you’re using your oven for the main course. The combination of smoky, salty bacon with sweet corn and spicy jalapenos is a flavor explosion I think we can all get excited about. I like to serve this alongside grilled steak or barbecue chicken, but it would also taste great with hot dogs, hamburgers, or anything really. Plus, a ½ cup serving of this Creamy Corn with Bacon and Jalapenos is just 142 calories or 4 Green, 2 Blue or 2 Purple Weight Watchers/WW SmartPoints!

Creamy Corn with Bacon and Jalapenos

Yield: 8 (1/2 cup) servings

Ingredients:

  • 4 slices center cut bacon
  • 3 oz 1/3 less fat cream cheese, softened to room temperature
  • ¾ cup fat free sour cream
  • 2 oz 50% reduced fat sharp cheddar, shredded (I use Cabot)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon chili powder
  • 20 oz frozen corn kernels
  • 1 medium jalapeno pepper, seeded and diced
  • 2 garlic cloves, minced
  • 2 scallions, sliced

Directions:

  1. Pre-heat the oven to 400 degrees. Lightly mist a 2 QT casserole dish with cooking spray and set aside.
  2. Cook the bacon to crisp using package directions and transfer to paper towels to drain. Chop or crumble the bacon into small pieces.
  3. Place the softened cream cheese, sour cream, shredded cheddar, salt, pepper, and chili powder in a large mixing bowl and stir together using a spoon or spatula. Once mixed, add the bacon, corn, diced jalapenos, garlic, and scallions and stir until well combined.
  4. Transfer the mixture to the prepared baking dish and bake for 25-30 minutes until heated through. Allow to cool for a few minutes and stir before serving.
