I like to serve this alongside grilled steak or barbecue chicken, but it would also taste great with hot dogs, hamburgers, or anything really. Creamy Corn with Bacon and Jalapenos

This Creamy Corn with Bacon and Jalapenos makes a great side dish a meaty main course, perfect for dinner or a cookout!

Ingredients

  • 4 slices center cut bacon
  • 3 oz 1/3 less fat cream cheese, softened to room temperature
  • ¾ cup fat free sour cream
  • 2 oz 50% reduced fat sharp cheddar, shredded (I use Cabot)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon chili powder
  • 20 oz frozen corn kernels
  • 1 medium jalapeno pepper, seeded and diced
  • 2 garlic cloves, minced
  • 2 scallions, sliced

Instructions

  • Pre-heat the oven to 400 degrees. Lightly mist a 2 QT casserole dish with cooking spray and set aside.
  • Cook the bacon to crisp using package directions and transfer to paper towels to drain. Chop or crumble the bacon into small pieces.
  • Place the softened cream cheese, sour cream, shredded cheddar, salt, pepper, and chili powder in a large mixing bowl and stir together using a spoon or spatula. Once mixed, add the bacon, corn, diced jalapenos, garlic, and scallions and stir until well combined.
  • Transfer the mixture to the prepared baking dish and bake for 25-30 minutes until heated through. Allow to cool for a few minutes and stir before serving.
