Meatloaf with Gravy

Meatloaf with Gravy on a plate with sides

This easy, tasty Meatloaf with Gravy is my absolute favorite meatloaf. I have several other meatloaf recipes on my site, and I truly enjoy all of them, but this one right here is just my ideal comfort food meatloaf. I adore gravy, which definitely factors into that decision, but even just the plain meatloaf is full of flavor. It’s not just me either. My husband upon trying this Meatloaf with Gravy said “oh, wow, this is one of my favorite things you’ve ever made” and then didn’t say anything else because he was too busy scarfing down meatloaf. It’s really good. He didn’t even realize I had blended ground turkey breast in with the ground beef, because the resulting flavor is beefy! Plus, the rich beef gravy tastes absolutely swoon-worthy. I like serving this Meatloaf with Gravy alongside mashed potatoes (upon which you can drizzle a portion of your gravy) and green beans with almonds for a complete comfort food meal. Each serving of two slices of meatloaf smothered in 1/3 cup of gravy is just 330 calories or 7 WW Points! I almost called this Meatloaf with Gravy “swirly meatloaf,” because one of my husband’s favorite things to grill are burgers made with a mixture of ground chicken and ground beef that he calls “swirly burgers.” In addition to the meats swirled together, this recipe uses common ingredients you likely already have on hand. The only things you may not have in your kitchen are Better Than Bouillon and Gravy Master (or Kitchen Bouquet). Like I mention in the ingredient listing, you can substitute powdered bouillon or cubes for the Better Than Bouillon, but I highly recommend purchasing it. I’ve seen it in pretty much every grocery store I’ve been to, including a small local store in my area, so you should be able to find it pretty easily. I have the chicken, beef and vegetable bases in my fridge at all times. BTB is sort of a paste rather than a powder, and the flavor is just unmatched in my opinion. The other ingredient, Gravy Master (I use that product, but Kitchen Bouquet is a different brand’s product that is similar), adds flavor and browning to your gravy in a way that enhances the whole thing. I always add it when I make gravy, it’s a must!

Meatloaf with Gravy

This is the BEST Meatloaf with Gravy recipe, and it's lightened up blending beef with ground turkey in a rich brown gravy for maximum flavor!

Ingredients

  • 1 ½ teaspoons olive oil
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 2 large eggs
  • 1 lb 95% lean ground beef
  • 1 lb 99% lean ground turkey breast
  • 2/3 cup plain breadcrumbs
  • 1 tablespoon Worcestershire sauce
  • ¾ teaspoon salt
  • ¾ teaspoon dried thyme
  • ¼ teaspoon black pepper
  • 4 tablespoons light butter, I use Land O’Lakes light stick butter
  • ¼ cup all-purpose flour
  • 2 cups reduced sodium beef broth
  • 1 teaspoon Better Than Bouillon Beef base, you can also use powdered bouillon or a bouillon cube, but I highly recommend BTB, it’s awesome
  • ½ teaspoon Gravy Master seasoning & browning sauce or Kitchen Bouquet

Instructions

  • Preheat the oven to 350 degrees and line a sheet pan with aluminum foil. Lightly mist the aluminum foil with cooking spray and set aside.
  • Drizzle the olive oil into a medium skillet and bring over medium heat. Add the onion and cook, stirring occasionally, for 3-5 minutes until softened. Add the garlic and stir. Cook for another 30-60 seconds until fragrant. Remove from heat and allow to cool.
  • Beat the eggs in a large mixing bowl. Add the ground beef, ground turkey, breadcrumbs, Worcestershire sauce, salt, thyme, and pepper. Add the softened onions and garlic. Using clean hands (or a fork), mush together until combined. Transfer the meat mixture onto the prepared baking sheet and form into a (roughly 9” x 5”) loaf (see photo). Place in the oven and bake for 45-55 minutes until cooked through (should have an internal temperature of 160 degrees).
  • When there is about 15 minutes left on the meatloaf, melt the butter in a medium saucepan over medium heat. When the butter is melted, whisk in the flour a little at a time. Cook for 2 minutes, stirring occasionally. Add the broth a little bit at a time, whisking it into the flour mixture until smooth and well combined. Add the bouillon and Gravy Master. Whisk regularly until the gravy comes to a boil and thickens. Remove from heat and allow to sit for at least 5 minutes to thicken.
  • Slice the meatloaf into 12 slices. Each serving is 2 slices of meatloaf with 1/3 cup of gravy.
