These baked oatmeal muffins feature Fall flavor with pumpkin and pie spices mixed with hearty oats and decadent chocolate!

Ingredients
2cupsold fashioned oats
1/3cuppacked brown sugar
1 ½teaspoonsbaking powder
1teaspoonpumpkin pie spice
¼teaspoonsalt
1egg white
1egg
¾cupskim milk
½cupcanned pumpkin
½teaspoonvanilla extract
1/3cupsemi-sweet chocolate chips
Instructions
Preheat the oven to 350. Lightly mist 12 cups in a muffin tin with cooking spray.
Combine the oats, brown sugar, baking powder, pumpkin pie spice and salt in a large bowl and stir until thoroughly mixed.
In a separate bowl, whisk together the egg white, egg, pumpkin, milk and vanilla. Add the wet ingredients to the dry ingredients and stir until blended together. Stir in the chocolate chips.
Spoon the oatmeal mixture evenly between the prepared muffin cups. Bake uncovered for 18-22 minutes or until oatmeal is lightly browned and a toothpick inserted into the middle comes out clean.
