2garlic cloves, minced
1teaspoonItalian seasoning
½cupplain breadcrumbs
1/3cupgrated Parmesan cheese
2large eggs
2ozchopped turkey pepperoni, divided (or minis)
¾lbraw 95% lean ground beef
¾lbraw hot Italian poultry sausage, casings removed if present (you can use chicken or turkey sausage)
½cuppizza sauce
½cup2% shredded Mozzarella
Instructions
Pre-heat the oven to 350. Lightly mist a 12 cup muffin tin with cooking spray and set aside.
In a small skillet, bring the oil to medium heat. Add the onions and cook for about 4-5 minutes until softened. Add the garlic and cook for another 30-60 seconds. Remove from heat.
Combine the Italian seasoning, breadcrumbs, Parmesan cheese, onion mixture, eggs and 1 ½ ounces of the pepperoni in a large mixing bowl and stir together. Add the ground beef and sausage and work together until combined (I use my hands for this step).
Divide the meat mixture evenly among the 12 cups in the prepared muffin tin. Top the muffins with the pizza sauce, dividing it evenly. Bake for 20 minutes. Remove from the oven and sprinkle with the shredded mozzarella and top with the remaining ½ ounce of the turkey pepperoni. Put back in the oven and bake for another 5 minutes. Allow to cool for about 5 minutes before removing from the pan and serving.
