Greek Snack Flats

Tasty flatbread spread with a rich layer of hummus and piled high with tomatoes, feta, olives and basil for a tasty, healthy snack!

Ingredients

  • 1 Flatout Foldit flatbread, I used Traditional White
  • 2 tablespoons hummus
  • 4 baby spinach leaves
  • 4 grape tomatoes, diced
  • 4 pitted kalamata olives, diced
  • 1 oz crumbled Feta cheese
  • 2 basil leaves, minced or slivered

Instructions

  • Using shears or a sharp knife, slice the foldit flatbread in half at the seam so you have two rounds*. Spread a tablespoon of hummus onto each half and place two spinach leaves on top of each flat. In a small dish**, mix together the tomatoes, olives, Feta and basil leaves and then spoon evenly over each flat.
    *If you’re making this for one, just build one flat and stick the other half back in the package for later
    **If you’re packing this to bring to work as a snack you can mix these ingredients up ahead of time and bring them in a sealed container
