Slow Cooker Beef Stew

This Slow Cooker Beef Stew couldn't be easier, and it's the perfect warm, hearty comfort food dish for a cold day.

Ingredients

  • 2 lbs raw lean trimmed round beef roast, cut into 1” cubes
  • ¼ cup flour
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 garlic cloves, minced
  • 1 small onion, diced
  • 3 (7-8 oz each) potatoes, cubed (mine came out to be 22 oz total)
  • 4 medium carrots, peeled and chopped
  • 1 teaspoon paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon dried parsley flakes
  • 1 bay leaf
  • 1 tablespoon Worcestershire sauce
  • 1 ½ cups fat free beef broth

Instructions

  • Place the beef cubes in a large Ziploc bag. In a small dish, combine the flour, salt and pepper. Pour the flour mixture over the beef and seal the bag. Shake bag until beef is well coated. Pour the beef into your slow cooker. Pour all the remaining ingredients over the beef and stir to combine. Cook on low for 9-10 hours.
