Croque Monsieur Egg Rolls

Pretty fancy name for ham & cheese egg rolls, eh? I actually made this recipe for Christmas Eve 2009 (my family always has an hors d’oeuvre smorgasbord in place of dinner when we get home from church on Christmas Eve – yum!). Since I remembered it being quite yummy I decided to try it again a few weeks ago. I made it for lunch and a few of these egg rolls are really pretty filling, so you could definitely make it an appetizer or a light meal.


Croque Monsieur Egg Rolls

Yield: 8 egg rolls


  • 5 oz cooked lean ham, diced (my grocery store sells pre-diced ham by the packaged deli meats)
  • 2 oz low fat swiss cheese, finely chopped
  • 1 tablespoon scallions, minced (green part only)
  • 8 egg roll wrappers
  • Mustard


  1. Preheat the oven to 400.
  2. In a small bowl, combine ham, cheese and scallions and mix together.
  3. On a flat surface, place an egg roll wrapper, corner facing toward you (like a diamond) and  put 3 slightly rounded tablespoons of ham mixture down the center of the wrapper, corner to corner, leaving ½ inch or so of space at the top and bottom. Fold one side of the wrapper in over the filling, followed by the top and bottom. Fold the remaining side in to completely cover filling and seal the loose end with a little bit of water. Repeat with remaining ingredients.
  4. Spray a baking sheet with cooking spray and lay the egg rolls on the sheet. Coat the tops of the egg rolls lightly with cooking spray. Bake 16 minutes, flipping once, until the wrappers are golden brown. Serve with mustard for dipping.
