4(4 oz each)raw boneless, skinless thin chicken breast cutlets
1tablespoonolive oil
3tablespoonsBuffalo wing sauce
4sandwich buns/rolls(I used Martin’s Potato rolls)
4leavesgreen leaf lettuce
4-8slicestomato
4tablespoonslight blue cheese dressing(such as Marzetti Light Chunky Blue Cheese)
Instructions
In a small dish, stir together your seasoning mix: flour, paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper.
Place the chicken cutlets into a mixing bowl. Add the seasoning mix to the chicken pieces. Stir the contents of the bowl until the chicken cutlets are coated with the flour and spices.
Add the oil to a large sauté pan/walled skillet and bring over med-high heat. Once the oil is hot, add the chicken cutlets in a single layer with a bit of space in between them. Cook the cutlets for 4-5 minutes until golden on the bottom, then flip and cook for an additional 4-5 minutes until cooked through. Reduce the heat to low and drizzle the Buffalo sauce over the chicken. Flip the cutlets to coat the chicken in the sauce and cook on low for another 1-2 minutes until the sauce is cooked onto the chicken.
To build each sandwich, top the bottom of a sandwich roll with a piece of lettuce and 1-2 slices of tomato. Add the cooked Buffalo chicken cutlet and then top with a tablespoon of blue cheese dressing and the top of the bun.
