Ingredients
4slicescenter cut bacon
3oz1/3 less fat cream cheesesoftened to room temperature
¾cupfat free sour cream
2oz50% reduced fat sharp cheddarshredded (I use Cabot)
½teaspoonsalt
¼teaspoonblack pepper
¼teaspoonchili powder
20ozfrozen corn kernels
1medium jalapeno pepperseeded and diced
2garlic clovesminced
2scallionssliced
Instructions
Pre-heat the oven to 400 degrees. Lightly mist a 2 QT casserole dish with cooking spray and set aside.
Cook the bacon to crisp using package directions and transfer to paper towels to drain. Chop or crumble the bacon into small pieces.
Place the softened cream cheese, sour cream, shredded cheddar, salt, pepper, and chili powder in a large mixing bowl and stir together using a spoon or spatula. Once mixed, add the bacon, corn, diced jalapenos, garlic, and scallions and stir until well combined.
Transfer the mixture to the prepared baking dish and bake for 25-30 minutes until heated through. Allow to cool for a few minutes and stir before serving.
