Ingredients

  • 2 cups uncooked old fashioned oats
  • ⅓ cup packed brown sugar
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons pumpkin pie spice
  • ¼ teaspoon salt
  • 1 large egg white
  • 1 large egg
  • ⅔ cup skim milk
  • ½ cup canned pumpkin puree
  • ½ teaspoon vanilla extract
  • ⅔ cup chopped apple (I left the skin on)
  • ¼ cup chopped pecans

Instructions

  • Pre-heat the oven to 350 degrees. Lightly mist a 12-count standard-sized muffin tin with cooking spray and set aside.
  • In a medium mixing bowl, add the oats, brown sugar, baking powder, pumpkin pie spice, and salt and stir together until combined.
  • In a separate large mixing bowl, add the egg white, egg, skim milk, pumpkin puree, and vanilla extract and whisk together until smooth. Add the dry ingredients to the wet ingredients and stir together until combined together. Stir in the chopped apples and most of the pecans. Spoon the mixture evenly amongst the wells in the prepared muffin tin and sprinkle the remaining chopped pecans over the top.
  • Place the muffin tin into the heated oven and bake for 20-24 minutes until the oatmeal is lightly browned and a toothpick inserted into the center comes out clean.
