Ingredients

For the Whipped Feta

  • 6 oz crumbled Feta cheese
  • 3 oz plain nonfat Greek yogurt
  • 1 oz 1/3 less fat cream cheese
  • 1 garlic clove minced
  • 1 teaspoon lemon zest

For the Bruschetta Topping:

  • 1 cup chopped cherry tomatoes
  • 2 tablespoons chopped fresh basil
  • 1 garlic clove minced
  • ½ teaspoon olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2-3 teaspoons balsamic glaze (can be found in squeeze bottles in most grocery stores)

Instructions

  • For the Whipped Feta: Place the Feta cheese, Greek yogurt, cream cheese, garlic, and lemon zest into the bowl of your food processor. Cover and run the food processor for a few minutes, stopping once or twice if needed to wipe down the sides with a spatula to make sure all the ingredients are incorporated, until the mixture is smooth and creamy. Pour the whipped Feta onto a platter or into a 9-inch pie plate and spread across the surface. Place in the fridge until needed (you can do this step ahead of time if desired).
  • For the Bruschetta Topping: In a mixing bowl, add the tomatoes, basil, garlic, olive oil, salt, salt, and pepper and then stir together to combine. Spoon the bruschetta topping across the surface of the feta layer. Drizzle 2-3 teaspoons of balsamic glaze over the top and serve!
