White Bean & Bacon Dip

A bit like a white bean hummus, with garlic, bacon, scallions, hot sauce and lemon for delicious flavor!

Ingredients

  • 3 raw slices center cut bacon chopped into small pieces (I used Oscar Meyer)
  • 4 garlic cloves minced
  • 1/3 cup fat free reduced sodium chicken broth
  • 1 (19 oz) can Cannellini beans drained and rinsed
  • 3 tablespoons diced scallions divided
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon hot sauce I used Sriracha, but you could use Frank’s or any kind
  • 1/8 teaspoon salt
  • 1/8 teaspoon paprika

Instructions

  • Place the cut up bacon pieces into a medium saucepan and bring over medium heat. Cook until pieces are crispy, stirring occasionally. Remove the bacon pieces to a paper towel using a slotted spoon. Reserve about 2 teaspoons of bacon grease in the pan and discard any additional if necessary.
  • Add the minced garlic to the bacon grease, still over medium heat and cook for about a minute until golden and fragrant. Add the broth and beans and stir to combine. Turn the heat to high and bring the mixture to a boil. Reduce the heat to low and simmer for 10 minutes.
  • In a food processor, combine the bean mixture, 2 tablespoons of the scallions, lemon juice, hot sauce, salt and paprika. Turn on and process until the mixture is smooth. Remove to a bowl and add in the remaining tablespoon of scallions and the majority of the bacon pieces. Stir to combine and sprinkle the remaining bacon pieces on top. Serve warm (you can definitely make this ahead of time and heat it up in a microwave before serving).
