Ingredients
2cupsuncooked old fashioned oats
⅓cuppacked brown sugar
1 ½teaspoonsbaking powder
¼teaspoonsalt
1largeegg
1egg white
1teaspoonvanilla extract
½teaspoonalmond extractoptional
⅔cupskim milk
1(5.3 oz)container nonfat cherry Greek yogurt(I use Dannon Light & Fit Greek)
⅔cuphalved cherriesfresh or frozen
¼cupsliced almonds
Instructions
Pre-heat the oven to 350 degrees. Lightly mist a 12-count standard-sized muffin tin with cooking spray and set aside.
In a medium mixing bowl, add the oats, brown sugar, baking powder, and salt and stir together until combined.
In a separate large mixing bowl, add the egg white, egg, vanilla, almond extract, skim milk, and yogurt and whisk together until smooth. Add the dry ingredients to the wet ingredients and stir together until combined together. Stir in the chopped cherries and sliced almonds. Spoon the mixture evenly amongst the wells in the prepared muffin tin.
Place the muffin tin into the heated oven and bake for 20-24 minutes until the oatmeal is lightly browned and a toothpick inserted into the center comes out clean.
