These easy Cherry Almond Baked Oatmeal Singles make a perfect grab-and-go breakfast or snack and really taste like you’re treating yourself! I love warm, hearty baked oatmeal, especially baked into perfectly portioned muffins, and this flavor combination is such a good one! Sweet juicy cherries with vanilla and almonds really make these taste special. Baked oatmeal pairs really well with coffee and any other breakfast items you like, and these “singles” come together quickly to bake once and eat all week. Not only are these Cherry Almond Baked Oatmeal Singles easy to make and delicious to eat, each one is just 109 calories or 2 WW Points each (or 4 Points if following the diabetic Weight Watchers plan). Ingredient Notes

  • Cherries: Since cherries aren’t in season yet (and even when they are they can be pricey), I used frozen cherries and it worked out great. If you have fresh cherries on hand though, definitely feel free to use them! You’ll just want to pit them and slice them in half first. I actually own a cherry pitter (affiliate link) that can pit six at a time and we use it fairly often in the summer, but if you don’t have one you can do it by hand.
  • Almonds: I like to use sliced almonds in this recipe, and I pretty much always have them on hand, but if you have slivered almonds, those will work as well.
  • Almond Extract: I marked this ingredient as optional and I’ve made these with and without the almond extract. I do think using it adds additional almond flavor that I enjoy, but if you don’t already have some and aren’t looking to buy it these will taste great either way.
  • Yogurt: I use Dannon Light & Fit Greek Cherry Yogurt in this recipe and it adds tasty cherry flavor that I really love! If you don’t have this, you could use a vanilla yogurt or ½ cup of unsweetened applesauce and these will still turn out tasty.
  • Oats: I always use Old Fashioned Oats in my baked oatmeal recipes and haven’t tried them with any other type. I always have a big container of these in my pantry for baked oatmeal!
  • Alternative Sweeteners: I haven’t personally tried making these using a zero-calorie sweetener in place of the brown sugar, but I feel that it would work out just fine. Just make sure the sweetener you’re using has a 1:1 substitution ratio with brown sugar so that the sweetness level isn’t off.

Cherry Almond Baked Oatmeal Singles

Ingredients

  • 2 cups uncooked old fashioned oats
  • cup packed brown sugar
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • 1 large egg
  • 1 egg white
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract, optional
  • cup skim milk
  • 1 (5.3 oz) container nonfat cherry Greek yogurt, (I use Dannon Light & Fit Greek)
  • cup halved cherries, fresh or frozen
  • ¼ cup sliced almonds

Instructions
 

  • Pre-heat the oven to 350 degrees. Lightly mist a 12-count standard-sized muffin tin with cooking spray and set aside.
  • In a medium mixing bowl, add the oats, brown sugar, baking powder, and salt and stir together until combined.
  • In a separate large mixing bowl, add the egg white, egg, vanilla, almond extract, skim milk, and yogurt and whisk together until smooth. Add the dry ingredients to the wet ingredients and stir together until combined together. Stir in the chopped cherries and sliced almonds. Spoon the mixture evenly amongst the wells in the prepared muffin tin.
  • Place the muffin tin into the heated oven and bake for 20-24 minutes until the oatmeal is lightly browned and a toothpick inserted into the center comes out clean.
