Chai Spiced Pear Baked Oatmeal Singles

Ingredient Notes
- Pears: I used a fresh pear in this recipe and it turned out great. Pears will soften up while baking either way, but using a ripe pear will get you sweeter results! I believe I used an Anjou pear if you’re curious. I have not tried making these with canned pears, but I’d imagine they’d also work if drained and chopped. Alternatively, if you have an apple on hand, I think you could easily substitute chopped apple for the pear with equally delicious results.
- Spices: If you don’t have all these spices (like ground cardamom) on hand, I do think it’s worth it to buy whichever one you’re missing to make these! They should all be easily found in most grocery stores. Trust me, you’re going to want to make these on repeat!
- Oats: I always use Old Fashioned Oats in my baked oatmeal recipes and haven’t tried them with any other type. I always have a big container of these in my pantry for baked oatmeal!
- Alternative Sweeteners: I haven’t personally tried making these using a zero-calorie sweetener in place of the brown sugar, but I feel that it would work out just fine. Just make sure the sweetener you’re using has a 1:1 substitution ratio with brown sugar so that the sweetness level isn’t off.

Chai Spiced Pear Baked Oatmeal Singles
Ingredients
- 2 cups uncooked old fashioned oats
- ⅓ cup packed brown sugar
- 1 ½ teaspoons baking powder
- 1 teaspoon ground cinnamon
- ½ teaspoon ground cardamom
- ½ teaspoon ground ginger
- ½ teaspoon ground allspice
- ¼ teaspoon salt
- 1 large egg white
- 1 large egg
- 1 teaspoon vanilla extract
- ⅔ cup skim milk
- ½ cup unsweetened applesauce
- ⅔ cup chopped pear, I left the skin on
Instructions
- Pre-heat the oven to 350 degrees. Lightly mist a 12-count standard-sized muffin tin with cooking spray and set aside.
- In a medium mixing bowl, add the oats, brown sugar, baking powder, cinnamon, cardamom, ginger, allspice, and salt and stir together until combined.
- In a separate large mixing bowl, add the egg white, egg, vanilla, skim milk, and applesauce and whisk together until smooth. Add the dry ingredients to the wet ingredients and stir together until combined together. Stir in the chopped pear. Spoon the mixture evenly amongst the wells in the prepared muffin tin.
- Place the muffin tin into the heated oven and bake for 20-24 minutes until the oatmeal is lightly browned and a toothpick inserted into the center comes out clean.
