Ingredients

  • 4 medium bananas
  • ½ cup semisweet mini chocolate chips or regular chocolate chips, I just happened to have minis
  • ¼ cup rainbow sprinkles
  • ¼ cup shredded coconut

Instructions

  • Cut bananas into 1” rounds and spread in a single layer on a baking sheet covered with wax paper. Freeze for at least one hour.
  • When bananas are frozen, place shredded coconut into a small dish and the sprinkles into another. In a small bowl, microwave the chocolate chips in 30 second intervals, stirring in between, until melted and completely smooth (mine took one minute).
  • Dip each banana round halfway into the chocolate and then either into the coconut or the sprinkles and place it back onto the baking sheet covered with wax paper. When all bananas are dipped, place baking sheet back in the freezer for at least 15 minutes or until chocolate is set.
