Ingredients

  • 2 cups uncooked old fashioned oats
  • cup packed brown sugar
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • 1 egg white
  • 1 large egg
  • cup skim milk
  • ½ cup unsweetened applesauce
  • 1 ½ teaspoons orange zest (about the amount from one large orange)
  • ¼ cup orange juice (from the orange you zested)
  • cup semi-sweet chocolate chips

Instructions

  • Pre-heat the oven to 350 degrees. Lightly mist a 12-count standard-sized muffin tin with cooking spray and set aside.
  • In a medium mixing bowl, add the oats, brown sugar, baking powder, and salt and stir together until combined.
  • In a separate large mixing bowl, add the egg white, egg, skim milk, applesauce, orange zest, and orange juice and whisk together until smooth. Add the dry ingredients to the wet ingredients and stir together until combined together. Stir in the chocolate chips. Spoon the mixture evenly amongst the wells in the prepared muffin tin.
  • Place the muffin tin into the heated oven and bake for 20-24 minutes until the oatmeal is lightly browned and a toothpick inserted into the center comes out clean.
