Ingredient Notes
- Oranges: I used a large Navel Orange for this recipe and it worked perfectly to get both the fresh orange juice and zest that I needed to give these delicious orange flavor. If your oranges are smaller, you may want to buy two just in case.
- Chocolate Chips: I went with standard sized semi-sweet chocolate chips and I love the big bites of chocolate they offer throughout the oatmeal cup. You can use mini chocolate chips if that’s what you have on hand, but I do recommend the full size ones.
- Applesauce: Choose an unsweetened, unflavored variety.
- Oats: I always use Old Fashioned Oats in my baked oatmeal recipes and haven’t tried them with any other type. I always have a big container of these in my pantry for baked oatmeal!
- Alternative Sweeteners: I haven’t personally tried making these using a zero-calorie sweetener in place of the brown sugar, but I feel that it would work out just fine. Just make sure the sweetener you’re using has a 1:1 substitution ratio with brown sugar so that the sweetness level isn’t off.

- 1 ½ teaspoons baking powder
- ¼ teaspoon salt
- 1 egg white
- 1 large egg
- ⅓ cup skim milk
- ½ cup unsweetened applesauce
- 1 ½ teaspoons orange zest, (about the amount from one large orange)
- ¼ cup orange juice, (from the orange you zested)
- ⅓ cup semi-sweet chocolate chips
Instructions
- Pre-heat the oven to 350 degrees. Lightly mist a 12-count standard-sized muffin tin with cooking spray and set aside.
- In a medium mixing bowl, add the oats, brown sugar, baking powder, and salt and stir together until combined.
- In a separate large mixing bowl, add the egg white, egg, skim milk, applesauce, orange zest, and orange juice and whisk together until smooth. Add the dry ingredients to the wet ingredients and stir together until combined together. Stir in the chocolate chips. Spoon the mixture evenly amongst the wells in the prepared muffin tin.
- Place the muffin tin into the heated oven and bake for 20-24 minutes until the oatmeal is lightly browned and a toothpick inserted into the center comes out clean.

Can you freeze these?
Has anyone made these? They appear extremely dry from the photo. Would love to make these for my Mom.
I just made these and found them to be a typical texture for baked oatmeal. They are chewier than muffins, and more crumbly. The flavor was great.
That’s a lot of sugar.
I subbed the orange zest and orange juice with 1/4 pumpkin puree and added 1 tsp vanilla & 1 tsp pumpkin spice. Eased up on the apple sauce so they wouldn’t be excessively moist.
Love them! Thanks!
These were SO good! Just the right size, just the right amount of sweetness – the perfect bite! We are huge orange/chocolate people in our house and let me tell you, these rocked both flavors! So easy, with clean, healthy ingredients. They *do* tend to stick to the tins, even with spray, and had to be really carefully removed. Nextime, I might try liners, or my silicone baking mold. These will be on repeat!
