  • Pre-heat your oven to 400 degrees Fahrenheit. Line a baking sheet with aluminum foil and lightly mist it with cooking spray.
  • Use a paring knife to cut around the top of each cherry pepper to remove the stem. Hollow out the inside of each cherry pepper, removing all seeds.
  • Stuff each hollow cherry pepper with two teaspoons of Boursin cheese. Wrap a strip of prosciutto around the outside of each cherry pepper, tucking any excess underneath the pepper.
  • Transfer the stuffed and wrapped cherry peppers to the prepared baking sheet and place in the heated oven. Bake for 20 minutes until the prosciutto is crispy and the tops are a bit golden.
