Prosciutto Wrapped Stuffed Cherry Peppers

These easy, low carb Prosciutto Wrapped Stuffed Cherry Peppers are the perfect 3-ingredient appetizer or snack! These make a great game day treat while watching football, or sometimes I even eat them for lunch. The fresh hot cherry peppers get juicy and spicy in the oven and are stuffed with creamy garlic and herb Boursin cheese and wrapped in salty, crispy prosciutto. Recipe Notes
- Cherry Peppers: We always use fresh cherry peppers for this recipe, which can be found in the produce section. If you have trouble finding them, I do think jarred cherry peppers would also work fine. Cherry peppers are super flavorful and can vary in how spicy they are. Make sure that when you cut the tops off that you get all the seeds out before stuffing. Also, wash your hands after handling hot peppers before touching your eyes!
- Boursin cheese: If you havenβt tried it, Boursin is a brand of creamy, crumbly cheese that comes seasoned in a few different flavors. Theyβre most known for their Garlic and Fine Herbs flavor which is what I used here, but weβve also made these stuffed cherry peppers with the Shallot and Chives flavor and it was just as tasty.
- Prosciutto: The grocery store I shop at most frequently (Wegmans) sells prosciutto in a 4 oz pack of thin Β½ oz slices. I cut each slice in half lengthwise and use half a slice to wrap each cherry pepper, tucking any edges underneath. It works perfectly!
- Making More/Less: Since this recipe is only three ingredients, it is super easy to scale as needed. Just making a few for yourself? No problem. Need to double or triple the recipe for guests? Also very simple.
- Air Fryer Option: I have tried making these in our oven, toaster oven, and air fryer and they all work, though I prefer the oven or toaster oven for this recipe. The air fryer browns the outside of everything much quicker than the oven. However, it totally works, and if youβre only making a couple it may feel easier. I would recommend trying them at 375-380 degrees for 10-12 minutes if using your air fryer.

Prosciutto Wrapped Stuffed Cherry Peppers
Ingredients
- 8 fresh hot cherry peppers
- 16 teaspoons Boursin Garlic and Fine Herbs cheese
- 2 oz thinly sliced prosciutto, cut into eight ΒΌ oz strips
Instructions
- Pre-heat your oven to 400 degrees Fahrenheit. Line a baking sheet with aluminum foil and lightly mist it with cooking spray.
- Use a paring knife to cut around the top of each cherry pepper to remove the stem. Hollow out the inside of each cherry pepper, removing all seeds.
- Stuff each hollow cherry pepper with two teaspoons of Boursin cheese. Wrap a strip of prosciutto around the outside of each cherry pepper, tucking any excess underneath the pepper.
- Transfer the stuffed and wrapped cherry peppers to the prepared baking sheet and place in the heated oven. Bake for 20 minutes until the prosciutto is crispy and the tops are a bit golden.
