Apple Cinnamon Baked Oatmeal Singles
I love Fall. It’s my favorite season. Fall to me means walking in cool, crisp air while leaves crunch under your feet. It means orange and yellow and red in the trees and the beginning of comfort food season. It means football and blue jeans and apple picking and pumpkin carving. It’s also the season of two of my favorite flavors: apple and pumpkin. Expect to see lots of recipes using one or the other (or both!) over the next couple months.
Since I went apple picking last weekend, I have a ton of apples ready to go for recipes. I thought it would be fun to also incorporate the applesauce I made earlier this week into something new. Then I also realized that Fall makes me crave warm, hearty breakfasts and that these Apple Cinnamon Baked Oatmeal Singles were the perfect fit. If you’ve been following my blog for a while you probably already know I love baked oatmeal. It’s kind of like having healthy cake for breakfast, and who doesn’t want that? You can easily make this in a baking dish if you prefer but I love the grab and go convenience of making it in muffin tins. The apples and cinnamon give these oatmeal singles a super comforting, tasty Fall flavor (kind of like individual apple cinnamon oat cakes). You can eat them cold, room temperature or reheated for a few seconds in the microwave – the choice is yours! This is a Fall breakfast pretty much everyone can get behind. Apple Cinnamon Baked Oatmeal Singles
Ingredients
- 2 cups old-fashioned oats
- 1/3 cup packed brown sugar
- 1 ½ teaspoons baking powder
- ¾ teaspoon cinnamon
- 1/4 teaspoon salt
- 1 egg white
- 1 egg
- ¾ cup skim milk
- 2/3 cup unsweetened applesauce
- ½ teaspoon vanilla extract
- 2/3 cup peeled chopped fresh apples
Instructions
- Preheat the oven to 350. Lightly mist 12 cups in a muffin tin with cooking spray.
- Combine the oats, brown sugar, baking powder, cinnamon and salt in a large bowl and stir until thoroughly mixed.
- In a separate bowl, whisk together the egg white, egg, applesauce, milk and vanilla. Add the wet ingredients to the dry ingredients and stir until blended together. Fold in the chopped apples.
- Spoon the oatmeal mixture evenly between the prepared muffin cups. Bake uncovered for 20-22 minutes or until oatmeal is lightly browned and a toothpick inserted into the middle comes out clean.

Does it matter if the oats are regular or quick cooking
I’ve only ever made baked oatmeal using old fashioned oats…not sure about quick cooking.
I have made these several times and used the quick oats, because that is what I had. Turned out fine each time.

I tried to make something similar recently and they came out fairly dense. Is there anyway to add some air into them?
Hi Kerry! Without knowing anything about the recipe you made it’s hard for me to comment, but baked oatmeal has a different, heartier texture than muffins. It’s not made with flour so it’s naturally going to seem dense if that’s what you’re comparing it to. While baked oatmeal is dense, it should still be moist and I believe all my recipes for it are. If you want more of a cake-like texture maybe you’d prefer to make muffins? A lot of people also pour warm milk over their baked oatmeal before eating. Let me know what you think if you try this recipe!
I love baked oatmeal have only baked it in an 8×8 pan. I love the idea of using muffin pans. I top mine with yogurt. Thanks for sharing your recipe Emily, i’m sure we’ll enjoy this very much

Just wondering how long you think these last? Do they freeze well? Just curious because I live by myself…and while I can definitely half the recipe, it would be nice to make an entire batch and freeze some of them for a quick grab-and-go breakfast.

To Jo and Miranda, I make a double batch of these and freeze them all the time! They reheat beautifully, about a minute for two muffins. This is a timesaving breakfast recipe! Thanks Emily.

I’ve never made them in a baking dish, but I would guess an 8×8 or 7×11 would work. You may have to bake it longer, I would just suggest trying it for the time the recipe states and then go from there.
Hey Emily! Is there anything I can use to replace the applesauce? I want to make these but don’t have any!
I’ve used yogurt or mashed banana in some of my other baked oatmeal single recipes. Obviously that would change the flavor, but it might still be yummy!

I am starting back with SmartPoints after a couple of year hiatus (got married, had a kid) and I am so glad I found this site! I love these oatmeal bites. I can eat them in the car on the way to work and they’re pretty tasty and curb the fat food breakfast craving. I can’t wait to try more recipes 🙂

I am making this recipe for the fourth time. I love it. I keep the “muffins” in the fridge and pull them out when I don’t have time for breakfast or need a snack. I love to warm them up and have them with coffee. Thanks so much for the tasty and practical recipe.
Have you tried them without the brown sugar? Would love to add the pumpkin along with the applesauce but not sure if it would work. Thanks
I’m a little confused by your comment…I don’t think pumpkin would be a swap for brown sugar. Am I misunderstanding? I definitely haven’t tried them without sweetener but if you’re adding pumpkin to the apple ones I would reduce the apple sauce.
I was wondering if there is a healthy option for the born sugar and if anyone has tried an egg substitute such as banana or apple sauce?

I’ve never baked them in a casserole dish before (I prefer to make them into muffins) so I really can’t say for sure. I’d suggest putting it in for the time listed to start and then checking on it every few minutes after that.

These are a staple in my house. I sub in unsweetened almond milk and Truvia brown sugar, and sometimes a ripe banana in place of some of the apple sauce to lighten it to 2 Smart Points. They freeze well, so I always make double batches.

Silly question– when you say 1 egg white and 1 egg, this is one full egg and just the egg white of second egg correct?
Just because I am curious, not sure if you’ve done this, if I were to use all whites (egg whites) what would be the amount you suggest?

I ran the nutrition information you posted through my points calculator and it doesn’t match the SmartPoints value you listed for the recipe – which one is right?
One of the changes Weight Watchers made in the switch to SmartPoints is that the recipe builder no longer counts the values of 0 SP fruits and vegetables when determining the final SP value for a recipe. Therefore, the SPs you get from the recipe builder may not match the SPs you get from running the nutrition information through the Weight Watchers SP calculator, because the nutrition information will contain the calories, etc from the fruits and vegetables.
I plugged the nutritional values in for these to track them on my WW app and it says they are 4 SP per and 7 for two?

Oh my gosh I wish I had found this site a long time ago. I made these and they absolutely phenomenal! I have this saved in Pinterest and I deleted all the other recipes like this one and will only make this one. My next try is the Blueberry ones.
I made these for the first time this morning. I decided to add 1/4 cup of chopped walnuts, for a little protein, even expecting it to up the points. I was happily surprised when I put it into the recipe builder on WW that it didn’t go up any points! I also upped the apples to a full cup. They were delicious! Even my husband loves them! Adding this to my regular breakfast menu! I love that I can freeze them to grab for a quick breakfast.
I made these yesterday and they are delicious! Perfect breakfast for me. I popped one into the microwave to warm and topped with a little sugar free maple syrup. I can’t wait to try other variations!
great–all of your oatmeal bakes turn out very well- just the right proportions. Used only 1/4 cup swerve brown sugar and plenty sweet-my applesauce was a homemade unsweetened and used a Fuji apple this time. wonderful fall flavor -great snack or breakfast
These are great! I just made a batch and thoroughly enjoyed the two I ate. I was excited to have breakfast for a few days until I realized my husband ate the other ten. I guess I am making more tomorrow.

It’s really hard to say since apples vary so greatly in size, but one or two should be fine.
Delicious!! I used only 1/4 c brown sugar and they were sweet enough. I also added 1 scoop of whey protein powder that is 1 point. This is a keeper!!
