Guest Post: Cherry Cheesecake Bites

Hello my lovely readers! As I mentioned last week, I’m on my honeymoon!! That’s right, Future Mr. Bites is now just Mr. Bites and we are currently living it up at an all-inclusive resort in Mexico for two weeks to celebrate. As I will be “unplugged” from the blogosphere while I’m away, I arranged for a couple of my blogger buddies to share recipes of their own for you until I get back!

Today’s post is by healthy snack guru, Lisa, from Snack Girl. I’m so happy Lisa decided to share these Cherry Cheesecake Bites with you, because I’m absolutely swooning over them. Cheesecake is one of my favorite desserts! Snack Girl is a wonderful blog that shares all sorts of recipes (not just snacks!) with nutrition information included, as well as weight loss tips and healthy product reviews. Make sure you pay Lisa a visit or connect with her on social media via Facebook, Twitter, Pinterest and Google+! Also check out Lisa’s book, Snack Girl to the Rescue! for more tasty recipes under 400 calories!

Without further ado, please give Lisa a warm EB welcome…:).

Snack Girl Cherry Cheesecake Bites

Hi, I’m Lisa! Because I write Snack Girl I receive all sorts of requests for low calorie recipes.  One reader wanted me to make a lighter version of cheesecake.

Cheesecake?  Nooooooo. I am not a miracle worker!  But, I did come up something that will remind you of cheesecake.

Make these Cherry Cheesecake bites in all of five minutes. Wash them, dip them in a mixture of cream cheese and powdered sugar, dip them again in mashed graham crackers – and you got a treat that will hit that cheesecake sweet spot.

If you can’t find cherries, this will work with strawberries or even slices of banana.

You can refrigerate these for a party later in the day. I would eat them the same day that I make them because the graham crackers will get soggy.

Cherry Cheesecake Bites

These Cherry Cheesecake Bites are an easy 5 minute snack or dessert!

Ingredients

  • 20 fresh cherries
  • ¼ cup whipped cream cheese
  • ¼ cup powdered sugar
  • 4 graham crackers

Instructions

  • Wash cherries and put them in a small bowl. Mix cream cheese and powdered sugar together until mixture forms a paste.  Place graham crackers in a plastic bag and crush with the back of a wooden spoon.  Put cracker crumbs in another small bowl.
  • One cherry at a time, dip cherry into cream cheese mixture and then graham cracker crumbs. Place on plate or baking sheet and refrigerate until ready to eat or eat immediately.

  1. I just mixed some up with Splenda and a dash of vanilla and cinnamon. I had to use blackberries because that’s what we’ve got in season, so not as precious looking, but so yummy. I clustered three berries together in a “nest” using a spoon to spread the cream cheese (I think the vanilla helped thin it a bit) , then dipped in the graham crackers. Chilled to set. A couple crumbled but were just as relish. I can’t wait for cherry season to roll around again. Thanks for the treat!

  2. Lovely! What a great take on cheese cake. This is one of those recipes that would actually look like the picture when I make them. I can just see these at a shower or something, they look so elegant!

  3. I noticed nothing was said about pitting the cherries . Is that optional? Picture is so cute. Sounds delicious.

  4. I think the seeds would be a problem! Nice recipe but not a fan of the cherries not being pitted!
