Guest Post: Cherry Cheesecake Bites
Hello my lovely readers! As I mentioned last week, I’m on my honeymoon!! That’s right, Future Mr. Bites is now just Mr. Bites and we are currently living it up at an all-inclusive resort in Mexico for two weeks to celebrate. As I will be “unplugged” from the blogosphere while I’m away, I arranged for a couple of my blogger buddies to share recipes of their own for you until I get back!

Hi, I’m Lisa! Because I write Snack Girl I receive all sorts of requests for low calorie recipes. One reader wanted me to make a lighter version of cheesecake.
Cheesecake? Nooooooo. I am not a miracle worker! But, I did come up something that will remind you of cheesecake.
Make these Cherry Cheesecake bites in all of five minutes. Wash them, dip them in a mixture of cream cheese and powdered sugar, dip them again in mashed graham crackers – and you got a treat that will hit that cheesecake sweet spot.
If you can’t find cherries, this will work with strawberries or even slices of banana.
You can refrigerate these for a party later in the day. I would eat them the same day that I make them because the graham crackers will get soggy.

I just mixed some up with Splenda and a dash of vanilla and cinnamon. I had to use blackberries because that’s what we’ve got in season, so not as precious looking, but so yummy. I clustered three berries together in a “nest” using a spoon to spread the cream cheese (I think the vanilla helped thin it a bit) , then dipped in the graham crackers. Chilled to set. A couple crumbled but were just as relish. I can’t wait for cherry season to roll around again. Thanks for the treat!
Lovely! What a great take on cheese cake. This is one of those recipes that would actually look like the picture when I make them. I can just see these at a shower or something, they look so elegant!
I noticed nothing was said about pitting the cherries . Is that optional? Picture is so cute. Sounds delicious.
I think the seeds would be a problem! Nice recipe but not a fan of the cherries not being pitted!
