Chocolate Raspberry Pudding Pops

I don’t remember where I bought my popsicle molds, but each one holds about ½ cup of filling. If you don’t own a set, there are a ton to choose from on Amazon. They’re worth a purchase because then you can also make Strawberry Cheesecake Popsicles, Sangria Popsicles and Ba-nilla Pudding Pops. Yum!

Raspberry Chocolate Pudding Pops

These Chocolate Raspberry Pudding Pops take less than 10 minutes to put together and once frozen are a super tasty and easy grab-and-go snack or dessert!

Ingredients

  • 1 box of sugar free, fat free chocolate pudding mix
  • 2 cups cold skim milk
  • 12 oz fresh raspberries
  • 1 tablespoon powdered sugar

Instructions

  • In a medium bowl, beat together the milk and pudding mix with a whisk until smooth and combined. Refrigerate for a few minutes to thicken slightly.
  • Puree the raspberries in a blender and stir in powdered sugar.
  • Layer the pudding and raspberry mixtures into 8 popsicle molds and place in the freezer for several hours until frozen through (I usually freeze mine overnight).

  2. Why oh why did they ever stop making Pudding Pops?! They were my favorite! Good thing I can make them at home now…I’m loving that these are a bit healthier too!

  3. I have made pudding pops in the past and have a hard time getting the popsicle out of the mold. The pop freezes in the mold and the stick comes out perfectly clean. has that ever happened to you? advice? I use these same molds.

    • If I have a hard time getting them outI usually run thr bodies of the popsicles in the mold under hot water for a minute or so. After that they should slide right out!

  4. Would frozen berries work okay with this recipe?

  6. I made these the other day – they tasted great! I couldn’t get them to come out as pretty as yours since my layers kind of mixed together. I’m guessing maybe if I refrigerate the pudding a bit longer it will help?

  7. Had a hard time creating such neat layers of pudding and fruit. Any tips?

    • If you want them to look perfect you can always put the pudding and fruit into separate plastic baggies, cut the corner off and then pipe them into the popsicle holders like you would with frosting. I hope that helps!

  8. Has anyone tried replacing the powdered sugar with maybe ‘splenda’ or stevia? For diabetic puddin’ pop lovers?

    • Hi Ruth, it sounds like you may not be in the US. Jello and other brands here make instant pudding mix and it’s available in pretty much every grocery store. You just mix the powder with milk and in sets into a pudding within 5 minutes in the refrigerator. I’m guessing you don’t have that where you live? It’s hard for me to suggest an alternative since I’m not really familiar with what ingredients you do have access to – I’ve never heard of UK Angel Delight! Sorry I can’t be more helpful!
