Cheeseburger Meatloaf Pie

Cheeseburger Meatloaf Pie

Is it meatloaf? Is it a burger? This Cheeseburger Meatloaf Pie is both! Two classic American favorites combine in this quick and easy weeknight meal that’s anything but traditional. The milk and breadcrumbs in the recipe keep the meatloaf moist and juicy and the burger seasoning, ketchup, mustard and cheese add all your favorite cheeseburger flavors. I imagine calling it “cheeseburger pie” may also get picky kids who may otherwise turn up their noses at meatloaf. Baking it in a pie plate also takes far less time than a traditional loaf pan and a huge (¼ of the plate) serving is only 8 Weight Watchers SmartPoints on the Green, Blue and Purple plans! If you’re serving more than four, you could definitely make this into six smaller servings and add some hefty sides. From beginning to end this whole recipe takes about 30 minutes and has almost no prep time, so this is a perfect weeknight dish. Cheeseburger Meatloaf Pie

Cheeseburger Meatloaf Pie

Two classic American favorites combine in this quick and easy weeknight meal that’s anything but traditional!

Ingredients

  • 5 oz fat free evaporated milk
  • ½ cup plain dry breadcrumbs
  • 1 tablespoon McCormick Hamburger Seasoning
  • 1 lb raw 95% lean ground beef
  • 1/3 cup ketchup
  • 2 teaspoons mustard
  • 3 oz 50% light sharp cheddar cheese, shredded

Instructions

  • Pre-heat the oven to 350. Lightly mist a 9” glass pie plate with cooking spray and set aside.
  • In a large bowl, combine the evaporated milk, breadcrumbs and hamburger seasoning and mix. Add ground beef and combine thoroughly (I just use my hands). Press the meat mixture into the bottom of the prepared pie plate and bake for about 20 minutes until meat is almost browned through. Remove from the oven and drain juices.
  • Spread ketchup across the top of the meatloaf. Squeeze the mustard back and forth across the surface of the pie in both directions, crisscrossing (I measured and this is about 2 teaspoons of mustard). Sprinkle the cheese over the top of the whole pie and place back in the oven for an additional 5 minutes until cheese is melted and meat is no longer pink.

  1. YUM! Could I mix the ketchup and mustard in, or is it important to be on the top? I have to say, finding your blog this week has been a game changer for me. I was just about to give up on WW, and now i’m not because I found food that works for me!

    • Last weekend I made Trisha Yearwood’s meatloaf (very few ingredients like this one…Less is more) which had the ketchup and mustard mixed in. I bet that would work well with Emily’s version and measurements. Can’t wait to try it. Emily’s recipes are always favorites in our house and at the office.

    • I don’t use squeeze-bottle mustard; I prefer deli mustard which comes in a wide-mouth jar. I plan to add the mustard to the meat, and put the ketchup on top. (I’m going to make this tomorrow or Saturday.)

    • I’m sure you could probably mix it in!

  2. Sounds like a good recipe for muffin-pan conversion for smaller portions 🙂

    • Smaller diameter, but thicker – be careful with the timing. You also lose the “pie” aspect, and the thickness will make it more meatloaf-like. I might use a couple of individual tart pans to keep it pie-ish. 🙂

  3. I don’t like buying spice blends in the store. I found a homemade copycat of the McCormick Hamburger Seasoning at this link: http://www.holistichomemaking.org/2012/07/mccormick-grillmates-hamburger.html

  4. This was very good and so easy! I will use less ketchup next time though. 🙂

  5. Thank you for another great recipe! My kids and I loved it:)

  6. My 2.5 year old asked for seconds of this tonight!

  7. Great recipe, Emily! Finally tried it tonight, sans the mustard, and it was delicious! For someone who doesn’t usually like meatloaf, this is perfect. No joke! 🙂

  8. Made for dinner tonight and loved it!!! Even my picky 2.5 year old. Thank you!!!

  9. Just made this for dinner, and it was great! Perfect portion sizes. Even my super picky fiancé cleaned his plate and said he couldn’t believe it was a healthy meal! Thanks, Emily! Definitely going on the dinner rotation (esp as it came together so quickly)!

    • Woohoo, picky fiance approved! So happy you both loved it! Thanks for telling me 🙂

  10. Hubby & I are doing WW and we made this tonight. I’m a picky eater and we both loved it. It was so moist and delicious! And there are many possibilities for toppings! Thanks for sharing:)

  12. Hi! Could this recipe work freezing before cooking? How would you modify?
