California Club Quesadilla

This quesadilla contains so many of my favorite ingredients. Avocado, bacon, chicken, cheese…how could it not be delicious? I had something similar to this about a year ago at Ruby Tuesday’s and ever since then I’ve wanted to make my own. This is a great dinner for those nights when you don’t feel like cooking a big meal. It’s quick, easy and tasty. If you’re eating alone it’ll be ready in a matter of minutes and to make several to serve the whole family shouldn’t take much longer. California Club Quesadilla Pre-cooked

California Club Quesadilla

This California Club Quesadilla is loaded with cheese, chicken, avocado, tomatoes and bacon!

Ingredients

  • 1 low carb high fiber large tortilla, (I used La Tortilla Factory Low Carb, High Fiber Whole Wheat Tortilla)
  • ¼ cup 2% reduced fat shredded cheddar
  • 1 oz cooked boneless skinless chicken breast, chopped
  • 1 oz avocado, chopped (This was 1/8 of my avocado)
  • ¼ of a small plum tomato, chopped
  • 1 tablespoon Hormel 50% less fat real bacon bits, usually found by the salad toppings

Instructions

  • Lightly mist one side of the tortilla with cooking spray and place it sprayed side down in a large skillet. Sprinkle half the cheese onto one half of the tortilla. Spread the chicken, avocado and tomato pieces over top of the cheese. Sprinkle the bacon crumbles and the remainder of the cheese over the chicken.
  • Fold the bare half of the tortilla over the half with the toppings and bring the skillet over medium heat. Cook, flipping halfway through, until both sides of the tortilla are browned and the cheese is melted. Slice into 4 triangles.

  3. Love a quesadilla! I saw you post on Facebook with the recipe “coming soon” right before I was walking into the market and grabbed an avocado and tomato (I have everything else). Will be making this tomorrow for dinner!

    • Made this tonight for a friend and I – very good!! I had a few extra veggies in hand that needed to be eaten before they went bad so I added mushrooms, green pepper and onions…thought of it like a california club quesadilla plus a little extra 😉

      Once again, full and satisfied with another EmilyBites original!

  10. Be careful what brand of low carb tortillas you pick up! I got Mission Carb Balance tortillas, only noticing the fact that they were low carb and not bothering to look at the other nutrition info. They’re a whopping 210 calories each! Yikes! 🙁
