Cheesecake Stuffed Strawberries

Cheesecake Stuffed Strawberries

Since Valentine’s Day is just around the corner, I’ll get right to the point. These strawberries are juicy, creamy, sweet little bites of perfection, ready to sweep your taste buds, your friends, or your special someone right off their feet.  Of course, these would be fabulous any time of year, but Valentine’s Day always seems like a time to indulge and be decadent. These Cheesecake Stuffed Strawberries give you all the decadence you could want for only 1 Weight Watchers SmartPoints on Green, Blue or Purple or 35 calories each! Cheesecake is one of my favorite desserts, but one slice from the bakery at my local supermarket is around 500 calories. These strawberries change up the ratio of berry to cheesecake so that you’re eating more fruit, and the berries provide the perfect vessel for portion controlled deliciousness. The graham cracker “crust” on top is the perfect finishing touch. With only 5 ingredients and no cook time, these sweet little treats are easy to whip up, and they’re so light you can indulge completely guilt-free!

Cheesecake Stuffed Strawberries

These Cheesecake Stuffed Strawberries are the perfect sweet and healthy summer dessert!

Ingredients

  • 1 lb fresh strawberries, this was about 16 large strawberries for me
  • 4 oz 1/3 less fat cream cheese, softened
  • ¼ cup powdered sugar
  • ¼ teaspoon vanilla extract
  • 1 full sized low fat graham cracker, one sheet of four little rectangles, crushed

Instructions

  • Cut the tops off of each strawberry and discard. Using a paring knife, hollow out each strawberry, removing the white interior.
  • In a mixing bowl, combine the cream cheese, powdered sugar and vanilla extract and beat with an electric mixer until thoroughly combined. At this point you can either transfer the cream cheese mixture into a piping bag and pipe it into each berry, or do what I did and just fill each berry using a butter knife.
  • Dip each strawberry, cheesecake side down, into the graham cracker crumbs, coating the top.
  • Note: These taste best the day they are made, so if you are not planning to serve/eat all 16  in one day, I recommend making the cream cheese filling, crushing up the graham cracker, and storing them separately (the cream cheese filling in a tupperware container in the refrigerator and the crumbs in a ziplock somewhere dry). This way, you can just hollow out however many strawberries you plan to eat at once and stuff them with filling to order.

  1. Yum! I’ve seen these popping up frequently on blogs, too. Can’t wait to try these. Much better cheesecake fix than the 500-calorie kind. =)

  2. I made these today…yummmyyyyy!!! 🙂

  3. I just happen to have strawberries!! Ia so glad I stumbled onto your blog. I’m also making the taco cupcakes today. Will let you know how it goes.

  5. Ooo, yum! I haven’t seen any other recipes for this yet. It’s a great idea.

  6. Has anyone tried this with the New chocolate cream cheese ?

  7. I have a big box of graham crackers the kids asked me to buy, but now refuse to eat. Now I know what to do with them. Thanks

  10. I’ve had this recipe for quite a few years. It was on halfmysize.com. The only difference was they used brown sugar on top instead of grahams:)

  11. i will be making these as soon as i see some decent strawberries in the stores!!!! they look like crap right now!! 🙁

  12. I made these this weekend! They were a HUGE hit! Seriously, really great and will definitely make again!

  13. I don’t even like cheesecake. These were AMAZING!!!! Better than chocolate dipped strawberries.

  14. I made these today and they are awesome!

  15. Made these Friday night for company and everyone was THRILLED!!

Who knew that cream cheese and powdered sugar would taste just like cheesecake! And the graham cracker dusting is just so cute.

I really liked the strawberry to filling ratio, I felt as if I was eating well while I was scarfing 4 of these.

I loved them so much, that we’re making them again tonight.

  16. These are awesome!!!!

  17. OMG!! I LOVE LOVE LOVE Cheesecake! These would be so cute to make!

  18. I just have to post another comment – we have made these every single day since we found these on your site!! On the weekend we’ve been having 2 with breakfast, then during the week we are alternating between having 3-4 of them as an appy, or 4 of them as a dessert. My husband makes up a container of the cheesecake mixture and then just hollows/stuffs the strawberries as needed. It’s so easy, tasty, and good for you too – PERFECT

    • You just made a great point, Phyllis! I think I’m going to add to the recipe that if you want to just make a few at a time you should store the cream cheese filling separately and then just hollow and stuff them as needed. Smart thinking! I’m so happy you love these so much 🙂

  19. I can not wait to make these for our Mothers day BBQ on Saturday!! Love your site!

  20. i made these tonight…i made a few changes…cut both ends of the strawberries off so they could stand on my serving dish…being careful not to cut too deep and ruining the “bowl” of the berry. i added the pointed end of the strawberries that i cut off to the cream cheese mixture when creaming which made the cream cheese a little pink and gave it a faint strawberry flavor. also, i covered 1/2 with honey graham crumbs and the other 1/2 with chocolate graham crumbs. YUM YUM!!!

  21. I substituted Splenda for the powdered sugar and they were great! I’m on low carb, so these are just perfect for when you need a bite of something sweet!

  22. Hi, just wondering if I wear to make these early in the morning (7am) for serving around 6pm, would they still taste ok? Or is it better to make these a couple hours before?

    • I think the fresher these are the better. You could probably make the cream cheese filling and scoop out the strawberries and keep them separate until you’re ready to serve them.

  23. I just made these and my five year old loved them! They are super cute too!

  24. I made these twice last weekend. My husband, my kids and I loved them!!! They were the perfect low fat dessert I’ve been looking for! Thanks for the recipe!

  25. how many calories are in here? thanks!

  26. This recipe is “the bomb” and super easy to make! We had all ingredients in the fridge (except for graham crackers, but Animal crackers worked great!) and oh my goodness these were FANTASTIC! They were phenomenal! What a super easy, super simple, super genius idea:)

  27. I made these this past Saturday for a get together with friends and everyone loved them. Since it’s summer, thought it would be more refreshing than cake. Will definitely be making these again.

  28. Can you use fat free cream cheese?

  29. Omg! Faint

  30. Emily, I tried these last night and OMG!!! Most delicious thing EVER! I am a huge fan of cheesecake, so this is so amazing and such a great substitute! I have already shared this recipe (and your blog) with all of my WW friends. You’re the best – thank you so much!

  31. Soooo yummy! I can’t believe how great the cheesecake is!

  32. Making these (again) tomorrow for our Super Bowl party! Last time I thought the graham cracker crumbs got soggy, so I’ll just put them in a little dish on the side and let people dip as they go. Looking forward to enjoying them again!

  33. I use a small melon baller instead of a paring knife to put the holes in the strawberries and it works great.

  34. These are amazing!!! My family gobbled them up in 5 minutes. I just added a bit of crushe cinnamon graham cracker to the cream cheese mix and it was awesome. Seriously, no one could believe they weren’t terrible for you! Thanks so much!

  35. These are fantastic! Everyone loved them in my family and I got major compliments from my husband. I served them as dessert after making the Lasagna Cupcakes and Parmesan Zucchini Rounds from this website. Husband raved over the Lasagna and asked for it to join the favorites list!

  36. I made these last night and they were DELICIOUS, but you definitely can’t eat just one, I couldn’t stop. YUM YUM. Really easy to put together too. Will make again for sure. Thanks for posting recipe 🙂

  37. Loved these. Instead of the graham crackers I topped each with a blueberry for 4th of July. Well I tested one 🙂 wil core and fill the others on the 4th.

  38. Wondering if this recipe would work well with raspberries since they’re already hollow in the middle! What do you do with the strawberry cores? Seems like a waste?

    • the white core of a strawberry isn’t the flavorful part anyway, you just toss them. You can certainly try making this with raspberries, but as they are very small it may be tedious.
