Strawberry Cheesecake Pudding Parfaits

Strawberry Cheesecake Pudding Parfaits
Ingredients
- 1 (1 oz) package sugar free, fat free instant cheesecake pudding mix, (I used Jell-O brand)
- 2 cups cold skim milk
- 2 cups sliced or diced strawberries
- 2 sheets of graham crackers, a sheet is the rectangle you pull out of the box that’s made up of 4 smaller rectangles
- 8 tablespoons light whipped cream
Instructions
- Follow the directions to make the cheesecake pudding: whisk together pudding mix and milk in a mixing bowl for about 2 minutes and then place in the refrigerator to chill for a minimum of 5 minutes until set.
- In each of four parfait dishes (or just small drinking glasses), layer ½ cup strawberries, ½ cup pudding, one square of graham cracker (half a sheet) – crumbled, and two tablespoons of whipped cream. You can layer them however you wish, I did mine: ¼ cup strawberries, ½ cup pudding, the other ¼ cup strawberries, most of the graham cracker crumbs, the whipped cream, the remaining graham cracker crumbs. If not serving all at once, you can layer the strawberries and pudding and then stick back in the fridge until ready to top with graham crackers and whipped cream and serving.
