Sausage and Tortellini Tomato Soup

Stop looking for your next favorite soup recipe because I think I’ve found it in this Sausage and Tortellini Tomato Soup! This soup is what dreams are made of: spicy sausage, healthy spinach, a seasoned, flavorful tomato broth that’s slightly creamy and comforting pockets of cheese-filled pasta. I love one-pot meals and winter is totally soup season for me, so this was right up my alley. If you have leftovers of this soup, the tortellini *might* absorb some of the broth while in the fridge. The difference in mine was negligible, I didn’t even really notice except the broth seemed a bit thicker. If this happens, don’t fret! You can definitely thin it back out again by adding additional broth before reheating. It could make it a little tricky to determine the serving size for your leftovers (since a bit of the broth disappeared), but there are several ways to work it out. You can measure the leftovers in cups once you pull them back out again and then divide by the number of remaining servings to figure out how much to take (this would work great!). You can also cook and store your tortellini separately and then add a portion of it to each serving of the soup as it’s served. Or you can just eyeball it. Your call!

Sausage and Tortellini Tomato Soup

This soup has it all: spicy sausage, healthy spinach, a seasoned, flavorful tomato broth that’s slightly creamy and comforting pockets of cheese-filled pasta!

Ingredients

  • 1 teaspoon olive oil
  • ½ cup chopped onion
  • 2 garlic cloves, minced
  • 1 lb raw hot Italian poultry sausage, casings removed (I used Wegmans poultry sausage, you can use turkey or chicken sausage)
  • 32 oz fat free low sodium chicken broth
  • 1 (28 oz) can unseasoned crushed tomatoes
  • 2 tablespoons chopped fresh basil
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • A pinch of black pepper
  • ½ teaspoon crushed red pepper flakes
  • 3 oz 1/3 less fat cream cheese, cut into cubes
  • 12 oz refrigerated cheese tortellini
  • 2 cup torn fresh spinach

Instructions

  • Pour the olive oil into a soup pot or Dutch oven and bring over medium-high heat. Add the onions and stir to coat. Cook, stirring occasionally, for a few minutes until the onions are softened. Add the minced garlic, stir together and cook for another 30-60 seconds. Add the sausage and stir together. Cook, breaking the meat up into small pieces, until the sausage is cooked through and fully broken up.
  • Add the broth, crushed tomatoes, basil, Italian seasoning, salt, pepper and red pepper flakes, increase the heat and bring to a boil. Once boiling, reduce the heat to low and simmer, covered, for 20 minutes. Uncover the pot and add the cream cheese. Whisk the cream cheese in while simmering until the cheese is dissolved. Add the tortellini and spinach and stir together. Cover the pot and simmer for 10 minutes until pasta is cooked.

  1. This looks delish!! What brand of tortellini did you use? All the brands at my local grocery store are really huge – yours look so cute and tiny.

  2. I have made a similar recipe for many years and it’s a big favorite of all who eat it. I don’t add the cream cheese so it’s more of a basic tomato base soup. But everything else is the same ingredients. So fast and simple to make and taste great. Can’t go wrong!

  10. So I made this soup and it is AMAZING! Hubby says its one of the best things I have ever made. Once strange thing, my tortellini tripled in size and the soup became very thick, not liquidy like the picture. Its almost like the tortellini absorbed all of the soup (not a bad thing as this is sooo delicious) Not sure how or why this happened, any idea?

    • Hi Elizabeth, this answer from my FAQs should help!

      I ran the nutrition information you posted through my points calculator and it doesn’t match the SmartPoints value you listed for the recipe – which one is right?
      One of the changes Weight Watchers made in the switch to SmartPoints is that the recipe builder no longer counts the values of 0 SP fruits and vegetables when determining the final SP value for a recipe. Therefore, the SPs you get from the recipe builder may not match the SPs you get from running the nutrition information through the Weight Watchers SP calculator, because the nutrition information will contain the calories, etc from the fruits and vegetables.

  34. This soup was great similar to Rustic Italian tortellini soup by Taste of Home. I added 2 extra cans of broth 14.5 oz. each and 1 can Italian stewed tomatoes 14.5 oz. and it worked out beautifully.

    • Different brands and products can have varying nutrition information, so perhaps the sausage and tortellini you used were higher in points than the ones I used?

  52. I made this after several Weight Watcher accounts I follow on Instagram just ranted on about it. I was very surprised at how good it is! While I am a Louisiana gal and can take the heat of most foods I have acid reflux. I was a little worried over the hot Italian sausage and tomato so tried out a mild sausage instead. It’s still got a little punch that’s not settling too well with me at the moment so I will definitely try out a chicken sausage next time as suggested! Other than that, it’s pretty delish and I’ve got it dished to have every day for lunch this week. Love it! Thank you.

      I’ve never tried to make this in the slow cooker so I can’t give any instructions on that, I’m sorry! You could try cooking the tortellini separately and bringing it with you to add before serving. Hope it works out!

  57. I made this soup last night and loved it. The only problem I ran into was the fact that my kids and mom don’t like sausage all that much and the soup definitely has a stronger sausage flavor than I anticipated. Silly me, I thought it would be tomato soup with some sausage in it. Like I said, I loved it and will definitely make it again, but make sure your eaters like sausage!

    First – we love love this soup and I have served it to many guests asking for the recipe
    When I make the soup and put the tortellini in and we don’t eat it all and put in frig for next use it seems like the tortellini soaks up a lot of the liquid – does anyone else have this problem ad is there a “Fix” thanks

    • That happens sometimes with soups that use pasta or rice, it tends to soak up some of the liquid in the fridge. I just thin it out with broth or water when I reheat it 🙂

  67. I hesitated making this for so long (over a year) because it looked so delicious and I was convinced it wouldn’t taste like it looked. I was right! This tastes even better than it looks and now I’m kicking myself for waiting so long to try it.   71. I made this tonight and it was DELICIOUS!! My husband loved it too. My grocery store didn’t have raw poultry Italian sausage so I used a pack of Jennie O “Italian seasoned” lean ground turkey. It worked perfectly and tasted great! The fresh basil was so expensive so instead I used the crushed tomatoes with basil and added 2tsp of dried basil and the flavor was delicious. Can’t wait to make this again!

I didn’t use spicy chicken sausage but used a chicken sausage with basil and red peppers. Delish!  This will be on a weekly rotation. Thank you.

The ones from Trader Joes are only 10 oz but didn’t think it make a difference without the other 2 oz. Thank you for this delicious recipe!5 stars

  89. THIS SOUP! Ok, so I like soup but I don’t usually write reviews on soups I find ok.  Well, this isn’t one of those soups. This soup is amazing! I made only one change and used mild Italian pork sausage, as I couldn’t find chicken sausage the day I went to the grocery store, but other then that, I made it to the tee. It was so delicious. Can’t wait for leftovers!
