These lighter Strawberry Jell-O Poke Cupcakes use a few simple tweaks to lighten up a classic crowd-pleasing treat! These cupcakes are super easy to make using just a few ingredients, and they’re great for summer parties and backyard barbecues. I keep these low in calories by making the cake using diet soda and by using sugar free Jell-O, but they taste just as good as the original! These Strawberry Jell-O Poke Cupcakes are easy and tasty, and each one is just 93 calories or 4 WW Points on the current Weight Watchers plan. Ingredient Notes

  • FYI: This recipe uses boxed cake mix, diet soda, sugar free jell-o, and cool whip. If you are not a fan of any of these ingredients, feel free to make changes or follow a different recipe! No need to yuck other people’s yum. I feel like I need to pre-emptively add that, unfortunately!
  • Cool Whip: I used the reduced fat (formerly called Light) Cool Whip to frost these cupcakes, but you can use the original or the sugar free if that’s your preference. You could also make your own whipped cream, though that will change the nutrition info and Points if you are tracking either.
  • Diet Soda: I used a can of Sprite Zero Sugar in this recipe, but you can use other brands or flavors if you like! I think lemon-lime soda works well here, but I bet cream soda, Cherry 7-Up, or Dr. Pepper would work well too.
  • Strawberries: I like to stick a half a strawberry on top of each cupcake before serving. It makes the cupcakes beautiful and also makes them even tastier. There’s just something about strawberries and cool whip. If you’re making these for a patriotic holiday you can add some blueberries on top as well to make them red, white, and blue!
  • Flavor Variations: This is a fun recipe to play around with, because you can easily change up the flavor in so many ways! Feel free to try using a different flavor of cake mix, a different type of soda, or another fruit flavor of Jell-O, like raspberry or orange.

Strawberry Jell-O Poke Cupcakes

These lightened-up Strawberry Jell-O Poke Cupcakes are a classic treat that taste as great as the original!

Ingredients

  • 1 (15.25 oz) box white cake mix, (I used Pillsbury)
  • 12 oz can of diet lemon-lime soda, (I used Sprite Zero Sugar)
  • 2 egg whites
  • 1 (0.3 oz) package of sugar free Strawberry Jell-O mix
  • 1 cup boiling water
  • 8 oz container Cool Whip reduced fat whipped topping
  • 12 strawberries, cut in half

Instructions

  • Preheat the oven to 350 degrees. Place cupcake liners into 12 cups of a standard sized muffin/cupcake tin.
  • In a large bowl, combine the cake mix, diet soda, and egg whites and beat with an electric mixer until smooth. Divide the mixture evenly into the prepared liners in the muffin tin. Bake according to the instructions on the cake box (I baked for 20 minutes) and remove from oven to cool for 20 minutes. Use a fork or a chopstick to poke holes all over the tops of the cupcakes (I poked each cupcake four times with a fork).
  • While the cupcakes are cooling, place the Jell-O mix into a mixing bowl and add the cup of boiling water. Whisk together until the Jell-O powder is dissolved. Spoon the Jell-O liquid over the tops of the cupcakes and refrigerate for at least 30 minutes.
  • Top each cupcake with two tablespoons of cool whip and half a strawberry before serving.
