Pumpkin Apple Pecan Baked Oatmeal Singles
These Pumpkin Apple Pecan Baked Oatmeal Singles come together with ease and are packed full of delicious fall flavors! With pumpkin pie spices, toasty pecans, and juicy apples, these hearty oatmeal muffins are a great healthy way to enjoy some autumn baking. These baked oatmeal singles take about 30 minutes from start to finish and make a delicious breakfast or snack. My daughter loves to grab one when she gets home from school! If you’ve never made any of my baked oatmeal singles before, they are super easy and are perfect to make once and eat all week. Ingredient Notes
- Pumpkin: You’ll want to use plain canned pumpkin puree in this recipe – make sure you don’t grab pumpkin pie filling by mistake! You’ll have some pumpkin puree leftover since these only use ½ cup, so definitely check out the Pumpkin section of my recipe index for ideas on how to use the leftovers!
- Apples: I used Empire apples because that’s one of my favorite varieties to eat so I generally always have it on hand. Feel free to use your preferred type, but crisp apples work best in baking! Honey Crisp, Granny Smith Jonagold, Braeburn, or Fuji apples are all good choices.
- Pecans: You’ll want to use plain, unsalted chopped pecans for this recipe, which can usually be easily found in the baking aisle. I happed to have pecan halves in my cupboard, so I just chopped them up a bit to achieve the same thing.
- Pumpkin Pie Spice: This is pretty easy to find pre-mixed in the spices section in the baking aisle. I used Trader Joe’s brand because that’s what was in my cabinet, but you can use any brand you like. If you prefer to make your own spice blend, there are many recipes for pumpkin pie spice online! You’ll generally need cinnamon, ground ginger, nutmeg, allspice, and cloves.
- Oats: I always use Old Fashioned Oats in my baked oatmeal recipes and haven’t tried them with any other type. I always have a big container of these in my pantry for baked oatmeal!
- Alternative Sweeteners: I haven’t personally tried making these using a zero-calorie sweetener in place of the brown sugar, but I feel that it would work out just fine. Just make sure the sweetener you’re using has a 1:1 substitution ratio with brown sugar so that the sweetness level isn’t off.

Pumpkin Apple Pecan Baked Oatmeal Singles
Ingredients
- 2 cups uncooked old fashioned oats
- ⅓ cup packed brown sugar
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons pumpkin pie spice
- ¼ teaspoon salt
- 1 large egg white
- 1 large egg
- ⅔ cup skim milk
- ½ cup canned pumpkin puree
- ½ teaspoon vanilla extract
- ⅔ cup chopped apple, (I left the skin on)
- ¼ cup chopped pecans
Instructions
- Pre-heat the oven to 350 degrees. Lightly mist a 12-count standard-sized muffin tin with cooking spray and set aside.
- In a medium mixing bowl, add the oats, brown sugar, baking powder, pumpkin pie spice, and salt and stir together until combined.
- In a separate large mixing bowl, add the egg white, egg, skim milk, pumpkin puree, and vanilla extract and whisk together until smooth. Add the dry ingredients to the wet ingredients and stir together until combined together. Stir in the chopped apples and most of the pecans. Spoon the mixture evenly amongst the wells in the prepared muffin tin and sprinkle the remaining chopped pecans over the top.
- Place the muffin tin into the heated oven and bake for 20-24 minutes until the oatmeal is lightly browned and a toothpick inserted into the center comes out clean.
