Blackberry Ricotta Flatbread

This easy Blackberry Ricotta Flatbread is fresh, light, sweet, tangy, cheesy, crispy, and perfect for lunches! This flavor combination feels like it’s straight out of a trendy café, but it’s so simple to make quickly at home with just a few ingredients. Perfect with a cup of soup, a side salad, or some fruit for a tasty and satisfying lunch or a light dinner! I love using flatbreads to make what’s essentially a thin and crispy personal pizza, and this fruity version is my new favorite twist! Not only is this Blackberry Ricotta Flatbread simple to make and delicious to eat, but the whole flatbread is just 299 calories or 7 WW Points (or 8 Points if following the diabetic Weight Watchers plan)! Ingredient Notes

  • Flatbread: I used Joseph’s Multigrain Lavash, and it worked beautifully. It had great flavor, made a crispy crust, and was the perfect size for a personal pizza-style flatbread. Plus, it is nutrition/WW-friendly! I definitely recommend Joseph’s Lavash. I got it at Wegmans.
  • Cheese: I used fat free ricotta as the base for this flatbread pizza and sprinkled light shredded Mozzarella on top. I think these flavors work really well with the sweetness and tanginess of the other toppings.
  • Berries: I’m a huge fan of blackberries, and they taste great in this recipe, but feel free to change it up and try it with strawberries or raspberries instead!
  • Balsamic Glaze: I always have a squeeze bottle of balsamic glaze on hand, because it’s delicious on so many things! I usually buy my store brand (Wegmans), but many brands make their own version, so it should be easy to find. Trader Joe’s and Target both have a store brand of squeeze-bottle balsamic glaze, as well as many Italian food brands.
  • Basil: I like a little basil sprinkled over the top for freshness, but feel free to omit if you don’t have any or to substitute arugula for a different peppery flavor!

Blackberry Ricotta Flatbread

This easy Blackberry Ricotta Flatbread is fresh, light, sweet, tangy, cheesy, crispy, and perfect for lunch!

Ingredients

  • 1 lavash flatbread, approximately 9” x 7-8” (I used Joseph’s Multigrain Lavash)
  • cup fat free ricotta cheese
  • salt and black pepper, to taste
  • ¼ cup shredded 2% milk Mozzarella cheese
  • cup fresh blackberries
  • ½ teaspoon honey
  • ½ teaspoon balsamic glaze, (many brands sell this in a squeeze-bottle - I use Wegmans)
  • 1 teaspoon chopped fresh basil

Instructions

  • Pre-heat the oven to 350F degrees.
  • When the oven is pre-heated, place the flatbread directly onto the middle rack and bake for about 4 minutes until it stands firm when lifted.
  • Remove the flatbread from the oven and spread the ricotta cheese across the surface, leaving a bit of space around the edge for the crust. Sprinkle with a bit of salt and black pepper, to taste. Sprinkle the shredded Mozzarella over top of the ricotta and then spread the blackberries across the surface.
  • Return the flatbread to the middle rack of the oven and bake for another 4-5 minutes until the edges are lightly browned. Remove from the oven and drizzle the honey and balsamic glaze over the top. Finish by sprinkling the chopped basil across the surface. Slice and serve immediately.
