Garlic Green Bean and Turkey Stir Fry
This Garlic Green Bean and Turkey Stir Fry is an easy, healthy, one-pan meal that’s perfect for a weeknight dinner! If you’ve ever been to the chain restaurant P.F. Chang’s, you may have tried the Chili-Garlic Green Beans that are on their appetizer menu. I love those green beans, and I wanted to make something similar but add some protein to turn it into an entrée. Adding ground turkey worked perfectly and made it a filling and delicious dish that’s great served over rice. Not only is it super tasty, but each serving is just 299 calories or 3 WW Points on the current Weight Watchers program! Ingredient Notes
- Meat: I used ground turkey breast in this recipe, but ground chicken breast will be just as good and keep it lean! Alternatively, you could use small chunks of cut up chicken breast, or thinly sliced strips of steak and I’m sure those would be tasty as well.
- Shallot: Shallots are a type of small, mild onion. They’re fairly widely available, but if you can’t find them in your stores then use yellow onion as a replacement.
- Vinegar: I use rice vinegar (also known as rice wine vinegar) in this recipe, but apple cider vinegar will work if you need a substitute!
- Sesame Seeds: Sesame seeds make a fun garnish for this dish, but you can easily omit them if you don’t have them on hand.
- Though the ingredients above can be substituted if needed, I would not recommend substituting anything for the sesame oil, Hoisin sauce, or soy sauce. Those add important flavor to this dish!

Garlic Green Bean and Turkey Stir Fry
Ingredients
- ¼ cup water
- 3 tablespoons rice vinegar
- 2 tablespoons low sodium soy sauce
- 2 tablespoons Hoisin sauce, found by other Asian ingredients in most grocery stores
- 1 teaspoon sugar
- 1 teaspoon cornstarch
- ¼ teaspoon ground ginger
- ¼ teaspoon crushed red pepper flakes
- 1 tablespoon canola or vegetable oil, divided
- 1 tablespoon sesame oil, divided
- 1 lb 99% lean ground turkey breast
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ⅓ cup diced shallots
- 5 medium garlic cloves, thinly sliced
- 12 oz raw green beans, trimmed and cut to 1-2” pieces
- 1 teaspoon sesame seeds
Instructions
- In a small mixing bowl, stir together the water, rice vinegar, soy sauce, Hoisin sauce, sugar, cornstarch, ground ginger, and crushed red pepper flakes until combined and set aside.
- Drizzle half a tablespoon (1.5 teaspoons) of canola oil and half a tablespoon of sesame oil into a large sauté pan and bring over med-high heat. Once the oil is hot, add the ground turkey and sprinkle with the salt and pepper. Cook, breaking the meat up with a spatula into bite size chunks until cooked through. Remove the cooked ground turkey to a side dish and cover to keep warm.
- Drizzle the remaining canola oil and sesame oil (1.5 teaspoons of each) into the sauté pan and bring between medium and med-high heat. Add the shallots and sliced garlic. Cook, stirring frequently, until they start to brown (1-2 minutes). Add the green beans and stir. Cook, stirring regularly, for 5-6 minutes until the green beans start to soften.
- Add the sauce from step one to the hot pan and stir to combine with the beans. Let the sauce get bubbly (should happen right away) and cook like that for 30 seconds before reducing the heat to med-low. Add the cooked ground turkey back to the pan and stir to coat it in the sauce. Cook another 1-2 minutes to heat through and allow the sauce to thicken. Garnish with sesame seeds before serving.

Looks delicious! In a pinch, could thawed frozen green beans be used? I assume they would need to be dried off and would cook faster, but any suggestions are welcomed!
Sure, I assume you could use those in a pinch. Like you said, you’d want to thaw them and they would cook faster. I also find that frozen vegetables often release more water when cooked. They may end up a bit softer as well, but I think they’d probably still taste good!
