These tasty homemade Apple Chicken Sausage Patties are full of flavor and super easy to make! The shredded apple makes these sausage patties extra moist and juicy when cooked and give great flavor along with the chicken, parsley and sage. Don’t be intimidated by the idea of making your own sausage, you’re basically just adding seasoning to ground meat! One of the nice things about making your sausage patties at home rather than using store-bought sausage is that you can easily use a leaner cut of meat and know exactly what is in your sausage.

I love serving these Apple Chicken Sausage Patties for breakfast or brunch along with eggs and fruit, but they’d also be delicious on slider buns served for lunch or at a party. This recipe makes eight sausage patties, and each one is just 100 calories or 1 WW Point per patty (you can also have two patties for 1 WW Point)! Recipe Notes

  • Ground Meat: I used lean ground chicken breast for this recipe, because it pairs well with the other flavors, and because my husband likes it better than ground turkey. Ground turkey breast would be an easy replacement though if that’s what you have on hand!
  • Apples: I think pretty much any apple would be tasty in these sausage patties! I used an Empire apple, because that’s my favorite type and what I usually have on hand.
  • Make-Ahead: Since I usually serve these Apple Chicken Sausage Patties in the morning, I often like to make the meat mixture the night before and refrigerate it overnight so it’s ready to cook in the morning. This firms up the meat mixture and lets the flavors meld in addition to saving time in the morning! You can either leave it in the mixing bowl and form the patties in the morning, or form the patties at night and refrigerate them already formed.

Apple Chicken Sausage Patties

These tasty homemade Apple Chicken Sausage Patties are full of flavor and super easy to make!

Ingredients

  • 1 medium apple
  • 1 large egg
  • 2 garlic cloves, minced
  • 3 tablespoons dried parsley
  • 1 ¼ teaspoons ground sage
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon crushed red pepper flakes
  • 1 lb uncooked 98% lean ground chicken breast
  • 1 tablespoon olive oil

Instructions

  • Peel the apple and then shred (I used the largest holed side of a box grater). Wrap the shredded apple in paper towels and squeeze out most of the moisture. Unwrap to use in the next step.
  • Crack the egg into a mixing bowl and add the garlic, parsley, ground sage, salt, pepper, and crushed red pepper. Stir together using a fork until the egg is beaten and combined with the spices. Add the shredded apple and stir to combine. Add the ground chicken and combine using clean hands or a fork until mixed. Cover and refrigerate for at least an hour, or overnight (my preference) so flavors can meld and the mixture can firm up a bit.
  • Split the chicken mixture into eight balls, then press the balls into patties, about ½ inch thick. Drizzle the oil onto a large griddle pan or skillet and bring over medium heat. When hot, place the patties on the pan in a single layer, not touching each other. Cook for 4-5 minutes and then flip. Cook on the other side for another 4-5 minutes until cooked through.
