Kentucky Chicken Bites
These easy, lighter Kentucky Chicken Bites give tasty KFC-style flavor without being battered and fried! This flavorful seasoning mix on the chicken is peppery, savory, and pairs well with pretty much any side dish. I stuck with KFC vibes and served the chicken with my Stovetop Green Beans with Almonds and 3-ingredient Bisquick biscuits and it was a perfect combination! How to Serve
These Kentucky Chicken Bites are great on their own and pair well with all types of side dishes. I served them here with green beans and Bisquick biscuits, but they’d also be great with rice, potatoes, or any veggie side. They’d be perfect for meal prep as well, or on top of a grain bowl or salad. I love to eat a salad for lunch, and it’s great to have chicken bites prepped and ready to throw on top! This recipe is so versatile!
Cutting up the Chicken
I often buy a big pack of boneless, skinless chicken breasts at the store and then use kitchen shears to trim them down to make 5-6 oz cutlets to use in recipes. Everything I cut off to make the cutlets gets cut into chunks to make chicken bites! It’s easy to weigh out 1 or 2 lb of chicken chunks and freeze them for later in a quart size freezer bag. That way, I always have some on hand! Buying the bulk packs of chicken breasts is cost-effective, and cutting them into cutlets and bites ensured I have what I need on hand when I go to make a recipe. I find that kitchen shears like these ones (affiliate link) make this task go quicker and easier than using a knife, so I highly recommend using shears.

Kentucky Chicken Bites
Ingredients
- 2 tablespoons all-purpose flour
- 2 teaspoons paprika
- 1 ½ teaspoons white pepper
- 1 teaspoon garlic salt
- ½ teaspoon black pepper
- ½ teaspoon ground ginger
- ½ teaspoon dry mustard powder
- ½ teaspoon celery salt
- ⅓ teaspoon salt
- ¼ teaspoon dried thyme
- ¼ teaspoon dried basil
- ⅛ teaspoon dried oregano
- 2 lbs raw boneless, skinless chicken breast, cut into small bite-sized pieces
- 1 tablespoons olive oil
Instructions
- In a small dish, stir together your seasoning mix: flour, paprika, white pepper, garlic salt, black pepper, ground ginger, dry mustard, celery salt, salt, dried thyme, dried basil, and dried oregano.
- Place the chicken pieces into a mixing bowl. Add the seasoning mix to the chicken pieces. Stir the contents of the bowl until the chicken pieces are coated with the flour and spices.
- *You may want to do this step in two batches so as not to overcrowd the pan – 1T oil and1 lb chicken bites each batch*Add the oil to a large sauté pan/walled skillet and bring over med-high heat. Once the oil is hot, add the chicken pieces (don’t overcrowd the pan) and stir to break them up and coat them in the oil. Cook the chicken for 6-8 minutes, stirring every couple minutes. Once the chicken is cooked through and a bit golden on the outside, remove from heat and serve.
