These Buffalo Chicken Burgers offer a spicy, filling, flavorful burger topped with hot sauce and cool, creamy blue cheese coleslaw for crunch. If you love Buffalo chicken and a hearty, satisfying burger, you’re going to adore them combined into one! These Buffalo Chicken Burgers are super easy to make and cook quickly on the stovetop for a simple weeknight dinner. I also like the leftover patties chopped up in a salad the next day! Recipe Notes

  • Meat: I use ground chicken breast in this recipe because it’s very lean and gives good flavor for Buffalo chicken! If you have ground turkey breast on hand you can use that instead, or you can use a less-lean ground chicken mix (but that option will change the WW Points/nutrition info if you’re tracking that). You can also toss some chicken breasts in your food processor to use in place of the pre-ground chicken breast.
  • Buffalo Hot Sauce: I pretty much always use Frank’s Red Hot brand and in this instance I used their Buffalo Wings sauce. If you are sensitive to spice you can skip putting the extra teaspoon of it on top of the burger and just use it in the chicken patty.
  • Blue Cheese Coleslaw: I used Marie’s Light Chunky Blue Cheese Dressing, but you can use the light blue cheese dressing of your choice. If you aren’t a blue cheese fan, you can substitute a light ranch dressing instead (even though it pains the Buffalonian in me to say that). Bagged coleslaw mix is pretty easy to find near the bagged salad in most grocery stores!
  • Buns: I used Martin’s Potato Sandwich Rolls because I just like how they taste and they’re available at all my local stores. I do recommend those, but feel free to substitute your favorite hamburger bun.
  • Toppings: I kept it simple and just did lettuce, hot sauce, and blue cheese coleslaw on my burgers and I thought it was perfect. However, feel free to add your own preferred toppings like tomato, onion, or pickles.
  • Make Ahead: You can make the patties in the morning and let them chill in the fridge until you’re ready to cook them for lunch or dinner to make prep go quicker at meal time. It may also help the moist patties stay a little firmer, though mine stayed together just fine while cooking and flipping. It may also help the flavors meld together.
  • Cooking Method: I like to cook these Buffalo Chicken Burgers on a grill pan or griddle pan on the stovetop. They cook really quickly and easily and stay together really well on a pan. If you’re going to try to cook them on a traditional grill, I would definitely recommend refrigerating the patties for at least an hour before cooking to try to get them as firm as possible.

Buffalo Chicken Burgers

These Buffalo Chicken Burgers are a spicy burger topped with hot sauce and creamy blue cheese coleslaw!

Ingredients

  • 1 lb raw 98% lean ground chicken breast
  • ¼ cup panko breadcrumbs
  • 1 large egg
  • 1 scallion, sliced (green parts only)
  • 1 teaspoon dried parsley
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon dried dill weed
  • 3 ⅓ tablespoons Buffalo Wing sauce, divided
  • 1 cup undressed coleslaw mix, (found bagged in the produce section)
  • 3 tablespoons light blue cheese dressing
  • 4 hamburger buns, (I used Martin’s Sandwich Potato Rolls)
  • 4 lettuce leaves

Instructions

  • In a large mixing bowl, combine the ground chicken, panko breadcrumbs, egg, scallions, parsley, salt, pepper, garlic powder, dill, and two tablespoons of the wing sauce. Stir together with a fork until mixed. Form into four equal patties and place on a platter or cutting mat.
    Optional/Recommended: Cover and refrigerate for at least one hour to let the flavors meld and patties firm up.
  • When the burgers are ready to cook, lightly mist a nonstick grill pan or skillet with cooking spray and bring over medium heat. Place the burger patties on the pan (you may need to work in batches depending on the size of your pan) and cook for 5 minutes. Flip the patties and cook for an additional 5 minutes until the burgers are cooked through.
  • While the burgers are cooking, place the dry coleslaw mix and the blue cheese dressing in a mixing bowl and stir together until coated.
  • To build each burger, place a lettuce leaf on the bottom half of a burger bun. Add the cooked burger patty and drizzle a teaspoon of Buffalo wing sauce over the patty. Add ¼ cup of the blue cheese coleslaw followed by the top of the burger bun.
